You can admire it at <strong>The Fullerton Hotel</strong>. The bears are clad in cute little <del datetime="2011-12-27T11:07:34+00:00">sailor and safari costumes</del> bellhop and postmaster uniforms, surrounded by a ring of presents, poinsettia leaves and translucent lace. The rice is infused with the flavours from the squid, prawns, black mussels and chicken, then baked in an oven before being served.</p><p>The tasty ingredients help make up for the slight blandness of the rice, which is a tad under-seasoned. The chicken remains tender and moist. The prawns however are less juicy compared to the bacon-wrapped rendition. That being said, the foie gras does taste excellent. Be prepared to shell out the dough for this. Then, it struck me with its appealing location while the cooking was good but not exceptional. This time round, with a different chef at helm, I decide to try the restaurant&#8217;s new French-style <strong>Sunday brunch</strong>.</p><h4>Sunday brunch</h4><p>The brunch offers traditional country breakfast fares that you can order à la carte. That&#8217;s a nightmare for snap-happy bloggers like myself who frequently show off our gastronomic conquests. Thankfully, there are no such worries here. The kitchen turns out an ethereally light souffl&eacute; that is benchmark in every respect. The cake is a uniform blonde colour, with a rich eggy flavour that has been invigorated with a generous splash of Grand Marnier. You can explore the Merlion Hotel any day from March 13 to May 15, 2011 between 10am to 7pm. Familiar Singapore icons, such as the statue of Sir Stamford Raffles, speckle the purple wallpaper.</p><p>Operated by The Fullerton Hotel, the Merlion Hotel also takes reservations for overnight stays at the price of S$150 a night, but all 32 available nights were quickly snapped up within hours after going on sale. In the book <em>The Lion, the Witch and the Wardrobe</em> by C.S Lewis, the White Witch tempted a character, Edmund, with the rose-flavoured Turkish Delight candy. And now, roses have made their way into mooncakes, too!</p><p>The pretty in pink <strong>Rose Red Bean</strong> mooncake bears a very prominent scent of roses. It reminds me of <em>bandung</em>! This is of course the <strong>Lavender Macadamia Green Bean</strong> in snowskin. Upon the first bite, you get a soothing whiff of lavender. How elegant! The soft strawberry filling is simply delightful &mdash; it&#8217;s the taste of summer! At times I forget that I&#8217;m eating mooncakes because the flavours are just so unique and atypical of mooncakes.</p><p>Apart from being infused with floral essence, it is worth noting that these mooncakes are not too sweet. Squid ink gives me a little high. Whether it is <a href="http://sparklette.net/food/pasta-inc/" class="tooltip" title="Read this post: Pasta Inc - A Taste of Italy">pasta</a> or <a href="http://sparklette.net/food/sapore-italiano/" class="tooltip" title="Read this post: Sapore Italiano - Welcome to Gourmet Paradise">pizza</a>, squid ink lends it that unusual look and actually tastes good at the same time, even if it makes your mouth as black as <a href="http://z.about.com/d/kidstvmovies/1/0/P/9/tia.jpg" rel="external nofollow" class="extlink">Tia Dalma</a>&#8216;s from Pirates of the Caribbean.</p><p>The squid ink pasta here is served with tagliolini (made in-house) with sea urchin sauce and the sweetest cherry tomatoes. Praba, the assistant manager, explains that the squid ink is added <strong>while the pasta is being made</strong> rather than after. This way, the ink does not stain the teeth, and you will still look attractive to your valentine. This comes with goose liver on the side, and a wonderfully sweet and rich red Port Wine sauce. Personally I feel it is quite a waste to serve this dish to someone like myself as I can appreciate neither good beef nor <a href="http://sparklette.net/tag/foie-gras/" title="View all restaurant reviews with foie gras" class="tooltip">foie gras</a>. Here&#8217;s a very good write-up on the <a href="http://infopedia.nl.sg/articles/SIP_177__2009-01-08.html" rel="external nofollow" class="extlink">history and tradition</a> behind it. Typically eaten as an appetiser, this is the one dish that would usually elicit the most oohs and ahhs at the table.</p><p>A kaleidoscope of colours is created from the various types of shredded ingredients that include red pepper, carrots, ginger, chopped peanuts, vegetables, jellyfish and raw salmon amongst others. Over here, it even comes with pitaya (dragon fruit) slices! By the way, did you know that this fruit comes from a cactus plant?</p><p>To up the posh factor you can even have shredded <strong>Alaskan King Crab or lobster</strong> added to your salad. The crab meat is extremely succulent and sweet. What a great way to pamper oneself!</p><p><img src="http://sparklette.net/archives/929/alaskan-crab.jpg" width="560" height="400" alt="Alaskan King Crab" title="Alaskan King Crab" /></p><p>And that&#8217;s the aforementioned majestic <strong>Alaskan King Crab</strong>. Executive Chef <strong>Andy Lau</strong> (yes, exactly like the Hong Kong starlet) amusingly informs us that at times, the crab manages to make its escape out of the tank! So when you have a dish with a name like 好事发财 (good fortune), we lap it up like crazy. Can you tell why oysters + black sea moss = 好事发财?</p><p><img src="http://sparklette.net/archives/929/black-moss.jpg" width="560" height="380" alt="Black sea moss" title="Black sea moss" /></p><p>What intrigues me the most is the black sea moss. While this is apparently a very common ingredient in Chinese dishes, I have never had it in my life! My Mom never cooks it because it &#8220;looks gross&#8221;. Really, this peculiar vegetable (or weed) from the sea looks just like human hair! Or as the Cantonese would call it, &#8220;Fatt Choy!&#8221;</p><p>Taste-wise, the hair-like moss actually goes down very well. It suffices to say that I like it. What this means in English is, uh, improving step by step? Can someone offer a better translation? Basically, the 高 character sounds exactly like pastry in Chinese.</p><p>The &#8220;small&#8221; portion comes with a dozen pieces of the pastry evenly divided between deep-fried or coated in coconut shavings. Both are yummy but our favourite is the deep-fried one.</p><p><img src="http://sparklette.net/archives/929/nian-gao2.jpg" width="560" height="400" alt="Chinese cakes" title="Chinese cakes" /></p><p>Rather than being wholly <em>Nian Gao</em>, it also features a layer of yam and a layer of sweet potato. It&#8217;s the one with the alfresco area overlooking the river. I have passed by that place many times but never once dined there. So I was thrilled when Allan picked the place for dinner.</p><p><img src="http://sparklette.net/archives/431/salmon.jpg" width="500" height="375" alt="Salmon Sashimi" title="Salmon Sashimi" /></p><p>It was a <strong>seafood buffet</strong>, which was fantastic. It meant I could help myself to huge servings of salmon sashimi, crayfish, butter prawns, tempura, etc. Here are some small samples of what we had.</p><p><img src="http://sparklette.net/archives/431/assorted.jpg" width="500" height="375" alt="Assorted food" title="Assorted food" /></p><p><img src="http://sparklette.net/archives/431/tempura.jpg" width="500" height="375" alt="Tempura" title="Tempura" /></p><p>Despite being on diet, I threw caution to the wind and ate like a pig! I loved the crayfish and salmon sashimi especially. The salmon was very fresh! Desserts were totally yummilicious, especially those topped with vanilla.</p><p><img src="http://sparklette.net/archives/431/dessert.jpg" width="500" height="375" alt="Desserts" title="Desserts" /></p><p>I think we spent at least three hours there. It&#8217;s great to be able to enjoy a long conversation with your own boss as if you were friends! How many bosses can actually put their high ranking status aside and do that with their subordinates? Not many!</p><p>One of the main factors why I enjoy working at my temp job is definitely the people. There are so many interesting and unique characters over here. Like what Allan says, you can practically write a book about our department alone, with each chapter dedicated to each person. There&#8217;s the guy who smokes a lot, another who keeps speaking in Hokkien and spewing vulgarities to suppliers over the phone, etc. Hilarious!</p><p><img src="http://sparklette.net/archives/431/allan.jpg" width="500" height="375" alt="My boss Allan and I" title="My boss Allan and I" /></p><p>And finally, there&#8217;s my boss of course, who is so great I think he deserves to win the Best Boss award! He&#8217;s very understanding to his employees. From what I&#8217;ve seen in my three months over here, he has never raised his voice at any one of us no matter how much stress he is facing.</p><p>Whenever he needs me to do something for him, he says it as though he was asking a favour even though it is my job to do what he asks. And he also takes care to meticulously explain why he needs it to be done. Even at times when I need advice for non work-related stuff, he would be genuinely helpful and patient in listening to me and giving me advice, no matter how busy he is.</p><p>What cast the deepest impression on me was this one incident. At that time I haven&#8217;t found a new job yet. I asked Allan, what if you found a new assistant before I found a new job? What would happen to me? He assured me that no matter what, he would wait until I found a new job before he hires someone. I was so touched!</p><p>There should be more bosses like him around.
