The signature dark chocolate is a classic that lava cakes are most associated. Smoulder’s version consists of 50% dark chocolate, lending a strong cocoa aroma without the bitterness.
The intense dark chocolate is clearly for the most ardent of dark chocolate lovers – it comprises 70% dark chocolate. Due to the high cocoa content, the cake dries out more quickly than the cakes with lower cocoa content. Thus, more work goes into baking it as monitoring the heat of the oven and baking time is highly crucial.
The white chocolate matcha is a marriage of white chocolate and green tea – made of 100% real Japanese green tea without artificial flavouring or colouring. The natural bitterness of green tea balances the sugar so it isn’t cloyingly sweet.
The tangy and zesty white chocolate lemon is made with real lemon – you can even spot bits of lemon peel. The citrus flavour cuts the richness of the white chocolate, lending a refreshing lift.
The pretty in pink white chocolate raspberry will be popular with the ladies. It is neither too sweet nor too tart – the sweetness level is just right. Spot real raspberry bits around the crust and in the molten centre.
The white chocolate pistachio is the best seller here. The nutty flavour pervades throughout the entire cake; you get a crunchy texture on top, and a spongy fragrant cake surrounding a velvety white chocolate molten centre.
Coffee lovers are not left out; the milk chocolate mocha lava cake is for you. The ratio of 30% cocoa content and coffee content is just right; they complement each other without either being overwhelming.
For something with a little heat, try the alcoholic lava cakes. Juicy raisins are soaked in rum (though that’s the only component in the cake where you can taste the alcohol) amongst the chocolaty molten cake that consists of 30% dark chocolate.
