The hotel is collaborating with award-winning FINDS restaurant in Hong Kong to present authentic Nordic cuisine at Checkers Brasserie. The buffet spreads and set meals feature a progressive menu of both traditional and modern Nordic cuisine.
You are welcomed with the house-made Glögg, a traditional Nordic drink served during Christmas holidays. The warm drink is made of red wine, combined with spices, blackcurrant, fresh ginger, lemon and orange peel. Children need not feel left out as there is a non-alcoholic version made with fruit juice.
Traditionally served with raisins and almonds for more flavour and texture, this drink will spice things up and warm your belly.
Christmas Eve buffet dinner
Highlights of the Christmas Eve dinner include FINDS’ signature beetroot gravadlax and smoked salmon mousse on malt bread. This is a traditional dish with a modern twist; it is less salty than the customary dish, and added with beetroot.
Mustard-marinated herrings and the black Bershire cutlet gratinate are also items you will not want to miss. In addition to turkey and ham, carnivores can look forward to meats like spit roasted baby lamb and Wagyu beef leg.
The thick cut of salmon pastrami is seared with black peppercorn and fennel seeds, exuding a peppery flavour that cuts right through the fatty fish.

The guest chefs have specially imported Alder wood from Finland to prepare the Norwegian smoked salmon and hot-smoked mackerel salad. The popular Nordic fruit lingonberry has also been flown in to make the roasted venison.

New Year’s Eve buffet dinner
Indulge to your heart’s content at the extensive Nordic buffet dinner with highlights like smoked Lapland reindeer mousse, venison tenderloin with wild mushrooms and poached codfish fillet with tarragon.
Meat-lovers will find pleasure in the venison tenderloin with wild mushrooms. The meat is the epitome of tender; it is nicely charred on the outside and juicy on the inside.

The matcha cake is a refreshing pairing of green tea with chestnut. Rich aromatic chestnut cream is generously spread between soft layers of ladyfinger sponge cake, and laced with jewels of glazed chestnuts. Sinking your teeth into the light sponge will reveal a light green tea mousse.
