After closing its two franchise outlets here and being briefly absent from the Singapore restaurant scene, the Swiss chain of Marché restaurants is back! It has returned with a spanking new restaurant at VivoCity and a second outlet at 313@Somerset. Unlike before when it was run by a local franchisee, the new restaurants directly fall under the Swiss management, ensuring that quality would be kept in check.
Marché has often been compared to The Vila’ge, a local restaurant that pretty much rips off the entire Marché concept. The two share astounding similarities. Although both managements have denied any links, we don’t really know for sure.
But for now, this post would simply be about Marché. Just for the record, I love the new place! The overall feel is refreshingly different from before. I’m very happy to say that it trumps the Vila’ge in all aspects.
First of all, the restaurant has scored an awesome spot on the rooftop of VivoCity. One side of the restaurant is made almost entirely of glass windows, allowing ample skylight to pour in. It gives the feel of alfresco dining even though you’re really dining indoor. Best of both worlds!
Of course, its signature bull (or cow) mascot is back!
Like its previous flagship restaurant at the Heeren, this one also has segregated eating areas with each area sporting a different look. One area has double-seaters with red and white checkered tablecloth. Another has chairs with fur-printed seats. Then, there’s also a room that resembles a cottage.
The lines drawn between these separate themed areas are pretty blurry. To the people that don’t pay much attention, the place would simply appear as one large eating area. For one, large amounts of 500 year old wood taken from an actual Swiss log cabin is used throughout the entire restaurant. How’s that for authenticity?
The “cashless” system has also been retained, where every diner is given a card that records the purchase for each item ordered. In the past (as well as at the Vila’ge), a large flimsy card made from paper was used for this purpose. People who lost the card would incur a $100 fine. If I lost this card now, at least I would be paying $100 for a proper card made from plastic rather than a piece of paper.
Okay, let’s get on with what really matters – the food! What you will find here is predominantly European. Besides miso soup, I didn’t spot anything particularly Asian.

At the salad station, you can select your salad size and choose from various ingredients. We had a small salad with lettuce, baby potato and cheese. Yum!
Marché’s signature dish is rösti, a food made from potatoes. Don’t the potato shreds resemble pasta?

I have the rösti with smoked salmon. Cooked al dente, it is light and sort of fluffy on the inside. I like it!
But most of all I love the two large slices of nicely flavoured salmon. Very delicious! This is one dish I would recommend to all Marché visitors.
For the meat lovers, you can get your fix at the grill station. The food is barbecued only after an order has been placed.

I have – what else – grilled chicken breast. It is, rather disappointingly, a tad on the dull side. The sauce has such little flavour, I have to dump a lot of chilli sauce onto the chicken! For a relatively simple dish, they really should have gotten it right.
However, there is an unexpected find at the grill station – the yellow cream sauce. It has the distinct taste of wasabi and adds an interesting dimension to what is otherwise a boring dish.
An assorted range of buns and breads is available. These catch my interest…
Swiss cross buns! Each one is marked with a cross like the Swiss flag! Cute!

Of course I must have one! I am already stuffed, but that cute little bun is irresistible! I love the way the butter glistens under the light! It tastes a little sweet, and goes pretty well with this…

Chocolate mousse! I know it doesn’t look great here, but chocolate mousse is one of my favourite desserts! We don’t really get it much around here, do we? At Marché, we can simply grab a bowl and scoop as much of it as we want! Smooth, creamy, and sinful. Ooh la la, what a sexy little dessert. It needs not necessarily be eaten from a bowl, if you know what I mean.
Lastly, the drinks section. There are the usual tea, alcoholic beverages, and soft drinks such as snapple. I neglect to check out the beer. Would someone please let me know what’s the main brand of beer sold in Marché? At the Vila’ge it’s the German brand, Erdinger.

And since I am currently in a cappuccino craze, that is what I have. In fact, I must have at least one cuppa joe everyday! Over the past few weeks I have had the ones from Coffee Bean, Starbucks, tcc, McDonald’s and now Marché.
While we’re still on the subject, what’s your favourite place to get cappuccino? I need good recommendations! For now it’s tcc. But because there isn’t a tcc outlet at my workplace, I tend to buy it at McDonald’s. Cheap, cheap cappuccino from McDonald’s! Yeah, yeah, shame on me.
So anyway, if you don’t find yourself scampering off to Marché yet, this ought to do it:
Not only does Marché boast delicious European food that is prepared on the spot, they also guarantee their vegetables to be fresh and healthily cooked! They have even come up with a “7 point freshness program” to show for it.
Speaking of Switzerland, its influence does go far doesn’t it? Here there are Swiss army knives, Swiss rolls, Swiss chocolate, and now Marché! What other Swiss products can you think of?
I wasn’t actually a fan of Marché before when it had two franchisee outlets in Singapore for years. But after its reentry with this refreshing new restaurant falling directly under its Swiss management, I find it highly promising and definitely much trendier than before.
Yes, I’m a fan now!

I am from the Philippines. I was in Marche 2 days ago. The place and the food is great. When I got back to my home country i googled Marche and found this blog which is just as great as the restaurant. Congatulations Veron! You are an effective writer. I enjoyed your other blogs too. Yes, Marché is a great restaurant, not just because of the food, but the fact that they are willing to make further improvements. Thomas from the restaurant even left a comment explaining that they have improved their chocolate mousse (whose appearance I complained about). Yay!

with great curiosity i read your blog about Marché. Very well-written and perfectly illustrated. I’m very stunned of all the information you gathered about Marché and that leads me to a question!
I’m studying Tourism in the Swiss Alps and these days we (three follow students and me) have to do an analysis about Marché as an assignment for the subject Marketing (deadline is the 9. December 2009).
So I’m wondering if you could help us in our researches or if you could probably give us a little bit of your knowledge about Marché? Just to give you a picture about what we’re up to:
We have to analyse Marché in an external view (like catching opportuneties and threats of Marché in its environment) as well as in an internal view (becoming aware of Marché’s strengths and weaknesses )
So maybe you have some blurb for us about Marché or some hints or anything else useful :-)

Congratulation! once again, on the opening of new outlet at 313@orchard. My opionion on both outlets, Vivo City, which I patronised often, the newly opened 313@Orchard is more unique and spacious.

Also, Yulius, I’m vegetarian and found that there were plenty of vegetarian options at Marche. The soups are typically made with vegetable stock, there’s a huge salad station, fresh vegetables being made all the time, bread, pasta, pizza, rosti, and of course, DESSERT. I had a very easy time finding things to eat there.

well i know the food in marche restaurant is good.. because i work there before in suntec and in the heeren marche las 2004.. and im glad that i work there and experience the good taste of food..and if i will had a chance to come back, i will come again..hope to all the good staff there and ofcoarse, mr. chee and salim shah..

Hi, a friend took me at Marche last Dec. 2010. I must say the food was AWESOME, and the ambiance was GREAT!!! Can’t wait to go back to Singapore to eat there again! I met some fellow Filipino waiters who were so nice and accommodating. KUDOS!

I understand CESS was abolished more than a decade ago. In fact, the last time CESS was seen in bills was in the 80s.

We were definitely charged the 1% CESS in more than one restaurant as recent as 4 years ago. Not sure about present 2011 though.

Went to Marche Vivo city on 31 Dec to eat a joyous new year’s eve dinner, just to have the Entire evening ruined by having to listen to the Christian religious song “Hosiana”, when the restaurant started playing the second Christian religious song I couldn’t take it any more and left.
My husband ended up paying for a meal he never received. Had to argue almost ten minutes with the restaurant manager before she returned our money and didn’t even apologize for having left me with a queezy feeling the rest of the evening.
I have lived over thirty years in a Western country I can say it will NEVER be peace on earth as long as Caucasians/Christians arrogantly thinks they have no part in the lack of peace on earth.
Religious intolerance is to not let other people have their religious belief, thereby NOT said religious people should have the right to force their religion on other people.
THAT is to disrespect other peoples’ right to not believe in the religion in question.
The rule of being allowed to practice your religion freely comes from Christians having tried to eradicate other religions as “pagan”.
Now they are misusing this rule to continue to force their religion on other people.
In Communist countries a small percent never accepted the atheist society.
In “Western” countries there is a percent which don’t believe in religion and constantly are being disrespected by Christians (and some Muslims) who just can’t avoid forcing “God” on everybody else.
Which is to disrespect atheists right to not believe in a “God”.
During the seventies boys were forced to play with dolls and girls to play with cars, although the average girl prefer to play with dolls and the average boy prefer to play with cars.
Today it’s accepted that there is an average difference between the genders. BUT all human beings have the same equal human rights.
People in this country is so scared of being accused of being Communist that they can’t see the injustice in their way of thinking.
For religious people to have the “right” to force their religion on atheists is just as WRONG as Communist not allowing religious people believe in their religion!
A Christmas tree, Santa Clause and “Jingle bells” may be accepted, BUT religious songs belong in religious buildings!
Buddhist people don’t sing “praise Buddha” on Vesak day.
Jews, Taoists and Confucianists don’t even have a public holiday in this country.

Why does Cess still apply?
Even hotels do not charge Cess anymore.
Its so 1980s, i must change with CASE if this is acceptable practice. Do you know which other gov agency i can approach ?

WE DO NOT BUY ANYTHING FROM MARCHE RESTAURANTS ANYMORE!
The chain positions itself as “healthy” “fresh” “green” but apparently does not really care about neither environment no customers!
Yesterday at the Zurich airport location, an Indian woman just trashed the trey of cheese bread in front of us when we just bought it!
When my fiance asked her why she is doing it, she said ” we always do it because we need to close soon”!
So what I think is that its a shame for Switzerland to have such poor service in the most beautiful airport after I saw how people do care about the environment and do not just ignore such issues!
It is a shame of this woman and administration of the chain not to educate their staff !
